I would look for another dive shop if they have no clue.
AIR is Nitrox. You should be good to about 40%. If you want to use it
with a higher percentage of O2, then get it O2 cleaned.

I know all this but but just per example go on the genesis website and
check their regulator spec's and you see that most of them are not
permited for nitrox use ....

That's called "covering their asses"

ANYTHING is fine up to 40%
If it's not clean enough to use with 40%, it's not clean enough to use
with air.

If you will be using it with levels higher than 40%, then it needs
special treatment and should be dedicated to nitrox, oxygen, and air
service when the air is up to nitrox standards.

Unless it's one of those expensive & crappy lightweight Aluminium or
Titanium 1st stages .

Even then it's fine for up to 40%.
