Roatan advice needed

We are considering a Dive trip to Roatan and are thinking about 3 resorts;
Anthony's Key Resort, CoCo View resort and Inn of Last Resort. We are
looking for an All-inclusive (meals included) package in a nice place.

About us; We are certified divers but have not had a dive in 5 years and
only have 5-6 dives total experience. So we will likely need some sort of
refresher and/or personal attention to get us back up to speed. We'd like to
take full advantage of the dives but might also want a day or two to relax
and enjoy other activities.

Anyone been to any of these resorts? Which one(s) would give us what we
need?

Also other locations(other Islands) and resorts (on Roatan or off) would be
cool. But we are thinking most likely Carribean, Central America. Our budget
is around $2000 give or take a couple of $100 (should include airfare)
